Always Room for Jell-O

Some locations are known for a certain type of food that's a favorite among the locals - think about the cheesesteak sandwich, the po' boy, crabcakes, deep dish pizza.

Scott Hutcheson encountered something truly Minnesota on a recent visit there.

Pretzel Salad

  • 2 cups coarsely crushed pretzels
  • 3/4 cup melted unsalted butter
  • 1 cup plus 3 tablespoons sugar
  • 1 (8oz) package cream cheese, softened
  • 2 cups Cool Whip 
  • 1 large package (6 ounces) strawberry flavored Jell-O
  • 2 cups boiling water
  • 1 (10oz) box frozen strawberries

Preheat oven to 400°. Mix together the pretzels, butter, and three tablespoons sugar then press into the bottom of a 9 x 13 x 2 inch pan. Bake 8-10 minutes. Remove to let cool. Next beat together the remaining one cup of sugar and the cream cheese. Stir in the Cool Whip then spread this mixture over the pretzel layer. Mix the Jell-O, boiling water, and strawberries together and let set for 10 minutes. Pour this over cheese layer. Cover with plastic wrap and chill in the refrigerator for at least two hours.
